Whole buckwheat refers to the raw buckwheat grain with its tough outer hull still intact. This form of buckwheat is harvested directly from the plant and remains unprocessed, preserving the seed’s protective coating. It is mainly cultivated in Poland, Ukraine, Kazakhstan, and Russia, regions recognized for their long-standing buckwheat farming traditions.
Because buckwheat is not a true cereal grain, but rather a gluten-free pseudocereal, it is ideal for consumers with wheat allergies or celiac disease. Moreover, the buckwheat plant plays an important ecological role by supporting pollinators and enriching the soil without the need for chemical inputs, making it a sustainable crop.
Whole buckwheat is used primarily for milling into flour, sprouting, toasting (for kasha), or as animal feed. It is an essential raw material in gluten-free food production, and is often further processed into groats, flakes, or flour.
