Buckwheat (Fagopyrum esculentum) is a pseudocereal cultivated primarily in Poland, Ukraine, Russia, and Kazakhstan. Unlike true cereals, buckwheat is not related to wheat and is naturally free of gluten. Buckwheat flour is obtained by milling hulled buckwheat groats and can be processed into varying grades, from coarser wholemeal flours to ultra-fine micronized types.
