Quinoa is an Andean plant which originated in the area surrounding Lake Titicaca in Peru and Bolivia. Quinoa was cultivated and used by pre-Columbian civilizations and was replaced by cereals on the arrival of the Spanish conquistadors. Quinoa is a seed classified as a pseudocereal grain and it’s gluten-free.

Most widely grown type is white Quinoa. There is also a tricolor variety, which is a mixture of all three. Quinoa can also be rolled into flakes or ground into flour, which can then be used for cooking and baking. Today, majority of quinoa is produced in Bolivia and Peru.
